Yellow Rice And Seafood

2 cups Pearl white rice
1 - 2 lbs. Large shrimp
1 - 2 lbs. Scallops
2 cans White crab meat
2 lbs. White fish cut up into 1 inch cubes
2 cans Diced tomato
1 1/2 sticks Butter
1 large Onion, diced
1 large Red pepper, diced or 1 jar of red pimentos
3 cloves Garlic
1 tbsp. Salt
2 tsp. Cumin
2 tsp. Oregano
1 1/2 tsp. Pepper
2 tbsp. Bijol (powder coloring)
1 cup White or cooking wine
3 cups Water

Preheat Oven to 400 degrees.
In a large pot melt butter and add all fish products, simmer until shrimp is pink. Add garlic, onion, peppers, salt, pepper, cumin and oregano. Let simmer for 5 minutes, stirring occasionally. Add tomato products, water and cooking wine. Add Bijol and rice. Bring to a boil, stir and cover tightly with either a lid or foil. Bake in the oven for 1 hour.

Try to serve shortly after removing from the oven. If you find that it is dry, add a can of beer. The beer will not alter the taste in any way. Enjoy!!!!
