Super Grouper
Mix Italian bread crumbs with Parmesan cheese. Beat egg and milk together slightly. Sprinkle black pepper, to taste, on grouper. Coat fillets with flour and dip into egg and milk mixture. Roll fillets in crumbs and place on a buttered baking dish. Bake at 350 degrees for 15 minutes (or 20 minutes for thicker fillets). Melt remaining butter in a sauté pan. Add mushrooms, onion and cherry tomatoes. Sauté these ingredients for 1 minute. Add baked grouper, sherry and lemon juice. The pan should be hot enough to flame the sherry. Continue cooking until flames die out. Cover fish with the vegetable mixture. Garnish with parsley. Serve immediately.
