Snook Ceviche

2 Snook fillet
1/2 Red bell pepper
1/2 Green bell pepper
1/2 Yellow bell pepper
1/2 Orange bell pepper
1/2 cup Cilantro, chopped
1 White onion
1 Red onion
1 Tomato, deseeded
1/2 Habanero pepper
2 cups Lemon or lime juice
1 tbsp. Salt
1/2 tbsp. Red pepper
Pepper

Cut snook into 1/2 inch to 1/4 inch pieces. Cover with lemon or lime juice and let set for 1 hour. Chop all of the other ingredients and combine with snook and spices. Let set for an additional 2 hours. Mix every 20 minutes or so.

Note: important that you do not use any metal utensils or bowls. Plastic or glass only.
