Amanda's Seafood Cheese Dip

2 large Yellow onions, coarsely chopped
4 tbsp. Olive Oil
2   10 oz. cans Rotel, diced green chilies and tomatoes
2 lbs. block Velveeta cheese
1 lb. Cocktail shrimp, cooked
Cayenne pepper to taste

Cut Velveeta into 1 inch cubes and place in a crock pot. While cheese is melting, heat olive oil in a large fry pan. Add chopped yellow onions to pan and sauté until tender. Once onions are tender add both cans of Rotel and let mixture simmer. Once the cheese has melted add the mixture from the fry pan. Dash cayenne pepper into cheese mixture and stir well. Combine shrimp with cheese mixture, stir and serve will dippin' chips.
