Not The Food Court's Bourbon Chicken

2 lbs. Chicken thighs, boneless and skinless
4 oz. Reduced sodium soy sauce
1/2 cup Brown sugar, tightly packed
1/4 cup Bourbon
1 large clove Garlic, finely minced or 1 tsp. garlic powder
2 tbsp. Onion, finely chopped
1/2 tsp. Ginger, grated fresh or 1 tsp. powdered ginger

Combine all ingredients in Ziploc bag and marinate chicken in the refrigerator overnight, turning occasionally. Remove chicken, drain, reserve marinade. Fire up your grill and grill chicken till 2/3's done (approximately 8 to 10 minutes per side), move chicken frequently to avoid burning. Remove chicken, cool slightly, and chop into bite-size chunks. Heat 2 to 3 tablespoons olive oil in wok or large frying pan. Stir fry chicken 2 to 3 minutes over medium high heat, add marinade and continue cooking till boiling. Reduce heat to low, and simmer 1 to 2 minutes. Serve over rice with steamed vegetables (we use broccoli, bok choy, snow peas, and sliced water chestnuts).

When you have daughters it's inevitable you get dragged to the mall for some quality "shopping time" and lunch/dinner at the food court. Bourbon chicken is found in virtually every mall in the country and our kids go crazy over it. I finally came up with my own version to please them and save myself a mall trip or two!
