Nise's Cajun Chili

4  28 oz. cans Crushed tomatoes
4  6 oz. cans Tomato paste
1  10 oz. can Rotel Chili fixin's
1 1/2 lbs. Cajun sausage, andouille
1  16 oz. pkg. Crawfish
1/2 large Onion, chopped
1/2 large Green pepper, chopped
1 small pkg. Mushrooms, sliced
2 cloves Garlic, crushed
2 tbsp. Chili powder
1 tbsp. Basil
1 tbsp. Cajun seasoning
1/2 tsp. Garlic salt
Olive oil
Cayenne pepper to taste

Combine crushed tomatoes, tomato paste, Rotel and seasonings except garlic salt. Sautee' onion, green pepper, mushrooms and garlic in olive oil and garlic salt until tender, drain and add to sauce. Slice Sausage and add to sauce, let simmer for 1 hour. When ready, add crawfish, cook until pink and serve.
