Natalie Jo's Favorite Fried Catfish
Rinse and pat dry fish fillets and cut into finger width pieces. Place Andy's fry mix in a Ziploc bag. Heat 3 inches corn oil in your favorite fish cooking receptacle to 375 degrees. Soak fish briefly in milk, place 3 to 4 pieces in fry mix and shake to coat evenly. Slide gently into oil and cook till golden brown. Drain on paper towel. Melt butter in small sauce pan and add hot sauce. Simmer 3 to 5 minutes till flavors are well combined. Serve fish with sauce for dipping and your favorite fishy side dishes (Natalie prefers camp fried potatoes and corn). Our youngest daughter Natalie Jo is the queen of catfish, catching and eating. This is her favorite recipe. I've substituted other fish (shellcracker or bluegill fillets are fantastic), but I have to tell her it's catfish or she gets finicky and won't eat it!!!
