Marinated Shrimp

1 lb. Fresh jumbo shrimp, cooked
(You may substitute fresh with frozen jumbo shrimp)
1/4 cup Fresh parsley, chopped
1/4 cup Shallots, chopped
1/4 cup Tarragon vinegar
1/4 cup Red wine vinegar
1/2 cup Olive oil
3 - 4 tbsp. Grey Poupon
1/2 tsp. Crushed red pepper
1/2 - 3/4 tsp. Salt
1/2 tsp. White pepper

Peel, devein and cut tails off shrimp. Mix all ingredients, except parsley, in a medium bowl. Put shrimp in bowl tossing with marinade until well covered. Cover dish and marinade overnight.

Drain liquid from shrimp, sprinkle with parsley and serve.

NOTE: We generally make extra marinade and set aside to be pour over shrimp when served.
