Mango Fango

1 Mango (not too ripe)
2 oz. Soy sauce
1 tsp. Oregano
3 cloves Garlic
1/2 tsp. Salt
2 lbs. Mahi Mahi fillets
2 tsp. Butter
1 tsp. Olive oil

Mix salt with olive oil. Salt fish fillets and let stand for 1 hour. Cut mango into thin slices and sauté in soy sauce until tender. Grind oregano and garlic and add to skillet. Melt butter and heat until everything is mixed. Add fish and cook over medium heat for approximately 20 minutes.

Serve over wild rice, steamed rice, or over a bed of lettuce.
