Joe's Easy Fish Chowder

1 1/2 cups Trout, snook, snapper or redfish fillet, diced
1 - 2 Onions, chopped
1 - 2 Stalks celery, chopped
2 cups Potatoes, diced
1/2 cup Light cream or milk
Salt and pepper to taste
2 tbsp. Olive oil
1 Bay leaf
(Use more or less of any above items
to your taste.)

Soften onions and celery in olive oil in soup pan. Add 4 or 5 cups of water, potatoes, salt and pepper, and bay leaf. Simmer 20 minutes. Add fish, simmer 10 minutes. Add cream or milk. Stir and turn off stove.
