Grilled Salmon In Tequila Marinade

2 tbsp. Vegetable oil
1 tbsp. Soy sauce
3 tbsp. Tequila or Bourbon
1/2 tsp. Ginger, ground
1 tbsp. Brown sugar
Fresh ground pepper to taste
2 lbs. Salmon fillets, with skin and pin bones removed
1/2 tsp. Lemon juice

Combine all liquid and dry ingredients (except lemon juice) in a bowl. Leave fillets whole or cut into individual servings. Place salmon into a shallow dish (or inside a sealable baggie), add marinade and turn several times. Cover or seal and allow to sit for 20 minutes to 4 hours.

Salmon can be grilled, smoked, or grilled on a presoaked cedar plank. For plank grilling, soak a cedar plank in water for at least 20 minutes up to 4 hours. Preheat plank over medium hot grill. Carefully place salmon fillet on plank, skin side down. Place cover on grill, allowing enough air flow to cook salmon on medium to medium high. Usually 8 to 10 minutes or until done. (flakes easily)

While salmon is grilling, pour marinade into a small sauce pan. Gently simmer until liquid is reduced by 1/2. Remove from heat and add the lemon juice. Brush or spoon liquid over salmon and serve.
