Natalie Jo's Camp Fried Potatoes
Cover the bottom of a large frying pan with olive oil and heat. Add potatoes and onion, covering the bottom of the pan in a more or less even single layer. Your precision will depend on the number of pints consumed before or during cooking duties. Sprinkle with Everglades Seasoning to taste. Cook till golden brown and turn once, cooking till golden on the other side. Drain on paper towel and serve with Natalie's catfish. Don't get your hands to close or you might end up with one or two fingers missing. I know this recipe is a cardiologist's nightmare (or dream if he is putting kids through college) but...
