Cold Pasta Salad And Fresh Basil Dressing

Salad
1 box Fusilli (curly noodles)
2 jars Marinated artichoke hearts
1 1/2 Avocados
1 jar Capers
1 small jar Green olives, sliced
2 Tomatoes, diced
4 Scallions, chopped
4 Chicken breats, cooked

Dressing
1 cup Fresh basil
2/3 cup Olive oil
1 Lemon, juiced
1/4 cup Red wine vinegar
2 cloves Garlic
1 tbsp. Dijon mustard
1/8 tsp. Cayenne pepper
Salt to taste

Cook pasta for 8 minutes or until it sticks to the refrigerator door. Rinse noodles with cold water. Place in large salad bowl. Add shredded chicken, artichokes, avocado, capers, green olives, tomatoes and scallions.

Toss with dressing and chill.
