Blackened Yard Bird
Light the charcoal letting coals burn down and turn gray - medium heat. In a bowl make the basting sauce - mix oil and vinegar dressing, brown sugar, Worcestershire sauce, salt and pepper. Place chicken skin side up on grill and baste with sauce mixture. The charcoal will flare up until the oil burns off. Don't worry, have a beer and continue basting and turning chicken for 30 minutes. The skin will look quite black and charred which sears the juices in. Wait till you taste the skin. The Blackened Yard Bird goes great with Capt. Bob's Sugar & Spice Cole Slaw or your favorite potato salad. **NOTES** Grill outdoors, produces lots of smoke that will have your neighbors asking "What time is dinner". Have used the basting sauce on chicken wings and split Cornish Game Hens. Just adjust your cooking time.
