Baked Clams Casino

1 tbsp. Butter or olive oil
2  6 1/2 oz. cans Chopped clams
1 - 1 1/4 cups Breadcrumbs
(best if half of the breadcrumbs are Italian-seasoned
type and the other half plain)
1 Lemon, fresh, quartered
4 - 5 slices Fried bacon, crumbled
Garnish of your choice - fresh parsley, black olive, pimento
22 - 24 Clam shells

Heat butter or olive oil in a fry pan.
Add 2 cans of chopped clams with juice.
Add juice of about 1/4 fresh lemon.
Mix breadcrumbs into clam mixture, enough crumbs to make a paste-type texture; it may be better to use half plain and half seasoned breadcrumbs, since using all seasoned crumbs may result in a strong taste.
Crumble bacon and add to clam mixture.
Fill clam shells with mixture; top each with garnish of your choice-parsley, slice of black olive, pimento or bacon.
Bake at 350 degrees for approx. 15 to 20 minutes.
Serve with fresh lemon wedge.

Yield approx 22 - 24 clams
