Bahamian Rice

1 lbs. Bacon, fried and crumbled or cut into lunch strips
1 large clove Garlic, minced
2 large Greek peppers, diced small
1 large Onion, diced small
2 cans Stew tomatoes, drain well (save juice for rice)
1 can Black beans, drained and washed
2 cups Liquid (made from juice of stewed tomatoes and water)
3/4 tsp. Salt
1/4 tsp. Pepper
1/2 tsp. Oregano
1/2 tsp. Basil
Hot sauce to taste or use salsa

Fry bacon. Remove from pan, leave some fat/grease in pan and sauté onion, peppers and garlic. Add spices. Add 2 cups of liquid and tomatoes. Bring to a boil. Add rice and bacon. Stir & cover. Remove from heat & let sit for 10 minutes covered. Then add black beans. Stir and serve.
